Almond, Fennel and Orange Salad

An easy, healthy and nutritious salad

Ingredients:

  • ½ cup whole almonds
  • 2 tablespoons white balsamic vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 cup of flat leaf parsley
  • 2 fennel bulbs, sliced extra thinly
  • 2 sweet oranges, peeled and segmented
  • Salt and pepper to taste

Instructions:

To make dressing place vinegar, oil and mustard in a mixing jar and shake to combine. Toss fennel, orange segments, parsley and almonds in a large mixing bowl. Drizzle dressing over combined ingredients and add salt and pepper to taste. Serve immediately.
