Almond Bites
Makes approximately three dozen
Ingredients
- 1/2 cup botter or margarine, softened
- 1/4 cup sugar
- 1 egg, separated
- 1 tablespoon grated orange peel
- 1 teaspoon grated lemon peel
- 1 teaspoon lemon juice
- 1 cup flour
- 1 cup ground natural almonds
- 1/8 teaspoon salt
- 1 cup finely chopped natural almonds
- Whole almonds to decorate
Instructions
Preheat oven to 180 degrees.
Cream butter with sugar; beat in egg yolk, orange and lemon peels and lemon juice. Mix in flour, ground almonds and salt, mixing until just blended. Form into 1 inch balls. Beat egg white with fork until frothy. Dip balls into egg white, then into chopped almonds. Place on ungreased baking tray. Press whole almonds into centre of each to flatten.
Bake at 180 degrees for 10 minutes, or until lightly browned. Cool in wire racks.
