Caramel Spice Apples
Apple wedges simmered in a caramel orange sauce. A simple breakfast starter or dessert.
Serves 4.
Ingredients
- 2 large (500g) green cooking apples
- 10g butter
- 75g packet (3/4 cup) Slivered Almonds
- 4 tablespoons white or brown sugar
- 1-2 tablespoons of water
- 1 teaspoon cinnamon or mixed spice
- Approx 12, 5mm thick strips orange rind
- ½ cup orange juice
Instructions
Peel apples, quarter, remove cores and cut into thick wedges. Brown almonds in a moderate oven for a few minutes
Melt butter in large frying pan over low heat until foaming. Add almonds, choice of sugar and spice and the water. Stir until sugar caramelizes - it will separate from the butter.
Add orange rind and juice, stir until boiling, add apples, cover, simmer 10 minutes or until softened.
Serve over toasted waffles, pancakes or flapjacks. Accompany with any fruit yoghurt or vanilla ice-cream.
