Smoked Trout & Almond Salad

Salads get boring easily – there’s only so many ways you can slice & dice salad & vegetables before you feel like you’ve done it all.
The secret to continued fascination with those leafy greens? Make sure you have 1 – 2 “feature” ingredients in your daily bowl. Today’s recipe is all about livening it up with the satisfying crunch of almonds and distinct flavour of smoked trout.
- Mixed lettuce leaves
- 6 roma tomatoes, sliced
- 2 tablespoons capers, rinsed
- 350g smoked trout
- 100g whole almonds
- ¾ cup apple vinegar
- 2 tablespoons mustard oil
- 2 tablespoons sweet chilli sauce
- 50g flakes almonds, toasted
Step by Step Instructions
Place the salad ingredients into serving bowls.
Combine the dressing ingredients in a cruet or screw topped jar; shake or whisk to combine.
Toss salad with dressing before serving.
