Introduction

Vanilla Bliss Balls

By: Christina Soong

Like many people I seem to spend a significant part of my day running errands or ferrying my kids around. The work day can easily go by with a flash and it’s often when I’m about to step into my car that I realise that I’m starving and need to eat.

This is when these clever little Vanilla Bliss Balls come in – I keep them in the fridge at home or at my clients’ offices and I grab a couple when I need to eat on the run.

These gluten, dairy and refined sugar-free Vanilla Bliss Balls are a cinch to make – and are enough to keep you going during a frantic day

Ingredients

  • 1 cup natural almonds
  • 2 cups stoned dates, chopped roughly
  • 1 cup mixed pepitas (pumpkin seeds), sunflower seeds and pine nuts
  • ½ cup shredded coconut plus another ¼ cup for decoration (if desired)
  • 1.5 teaspoons vanilla bean essence
  • 2 tablespoons water

Step by Step Instructions

Step 1

In a processor, blitz almonds for about 20 seconds.

Step 2

Add dates and then blitz again until resembling rough sand.

Step 3

Add mixed seed mixture and ½ cup shredded coconut and blitz again until well combined.

Step 4

Add vanilla and water and blitz again until fully combined.

Step 5

Use a spoon to scoop out spoonfuls of the mixture and roll and press between palms to form small, walnut-sized balls.

Step 6

Roll into reserved coconut if desired or leave as is.

Step 7

Store in an air-tight container in the refrigerator for up until a week.
